Easy to make, yummy.

This ice cream recipe is simple. It has an unusual flavor profile, but don’t let this discourage you, as it is totally delicious. Honey-coriander Ice cream is refreshing, satisfying and rich: perfect for hot summer evenings. Who would have thought: coriander and honey? 

When I made this recipe, I was a bit angry and frustrated. I needed to make something that did not involve using the oven. The intention was to make a simple vanilla ice cream. Once ready to be cooled, I stared at this perfectly pristine looking custard, soon to be vanilla ice cream, thinking of ways to ruin it. First thought: honey. Second thought: coriander? Perfect!

  • 1 cup of low-fat milk
  • ¾ cup sugar
  • pinch of salt
  • 4 egg yolks
  • 2 cups of cream
  • 1-teaspoon coriander
  • 1-teaspoon vanilla
  • 1-tablespoon good honey

Heat milk, sugar, and salt in a pot over medium low heat until sugar dissolves (about 5-7 minutes). Remove from heat, and set aside. In a clean bowl, beat egg yolks. Pour about half a cup of heated milk mixture into the egg yolks; whisk. This will temper the eggs, and prevent them from scrambling. Turn the burner back to medium-low heat.  While whisking continuously, pour the eggs into the saucepan with the remaining milk-sugar mixture, then the heavy cream. Cook until the mixture is thick enough to cover the back of a metal spoon. This usually takes less than 5 minutes. Remove from heat immediately.

Add vanilla, honey and coriander. Up to now you have successfully made a honey-coriander custard.

In order to cool the custard faster, I set up a cold bath for the warm custard. Set up a bowl with ice and a little bit of cold water. I put the custard into another bowl that fits in the bowl with ice. Whisk the mixture until it cools completely. If you prefer, you can cover the custard with plastic wrap and leave in the fridge until it is cool and/or you are ready to freeze it in the ice cream maker.

Once cool place in ice cream maker, turn on at the lowest speed and leave running for 20-30 minutes, depending on how cold or hot your kitchen is. Once it looks like a thick milk shake, remove and freeze in a container until hardened.
