
A couple of weeks ago, I went to the post office to deliver resumes for teaching jobs in Miami. As usual, my pessimistic personality possessed my aura as I walked into the store, defeated, knowing there was no hope. I knew I would not get any of the jobs I was applying for, and the next three months would continue to be as uncertain and miserable as the past three. The middle aged Indian man standing on the other side of the counter greeted me with kind words. And for the next five minutes I felt transparent. Every single word he said was beautifully crafted, reading every single thought that crossed my mind. He knew I was feeling anxious, he also knew everything would be fine. He told me the life was all about attitude, and that he was sure I was talented enough to do whatever I wanted in life and be happy. I was not asking for advice, he just selflessly gave it to me. I am not very spiritual, but for a split second I felt something I have never felt before, a jolt of energy and inspiration.

I have been travelling for the past two weeks, and yes, I finally got a job. Not permanent but at least for several months. I am moving to Miami in a week, and almost everything will be changing. I am not sure what this will mean for the blog, as it is a totally different place with different foods, but I think I will be able to adapt. I am from the Caribbean anyways! It only means going back to my origins, sunny days, and tropical weather.

Back in Cambridge, a rainy day awaited, with nothing in the fridge but a couple eggs, half an onion and a head of garlic. Hence this super easy garlic soup with arugula. It’s homage to the never sunny Boston. Enjoy!



Garlic Onion Soup
- 1 teaspoon olive oil
- ½ onion
- About 7-8 garlic cloves
- 4 cups of water
- 1 teaspoon of salt
- Hanful of arugula
- 1 egg
Heat oil in a medium heat pan. Slice onions and garlic. Place onions and garlic in heated pan with salt. Sauté for five to seven minutes, or until soft. Add water and cook at medium-high heat for 15 minutes. Taste, add salt if needed. On a soup bowl, place handful of arugula. Ladle soup into bowl. I added a poached egg for texture.
